Lucy’s spinach and ricotta lasagna

Wilt the spinach in a pan. Then drain. Let it cool then press as much water from the spinach as possible. Then chop add to the ricotta cheese, add the pine nuts and nutmeg and salt and pepper. Then layer up your lasagna. 1/3 spinach mix, 1 layer lasagna etc. 

Make the white sauce by melting the butter in a pan then add the same amount of flour. Stir until it becomes a paste, just like the photo.

Then add a little bit of milk. Stir until the milk is all absorbed, add a little more as keep stirring, repeat until all the milk is used. Cook for a few minutes stirring all the time. The sauce will thicken a bit.

You can add nutmeg or pepper.
