This Recipe of the month is from Fiona and Lucy, “Overnight Oats – Serves 1″

Michelle supported Fiona and Lucy to make healthy overnight oats for the following morning’s breakfast, it’s a simple, easy option and something a bit different than the usual cereal. We made enough for everyone and we can vouch that they tasted as delicious as they looked YUMMMM!!!!!!

Ingredients: 40g of Porridge Oats, 200g Natural Yogurt, Mixed Blueberries, Raspberries & Strawberries (Fresh or Frozen)

 Method:

1. Layer the porridge, Yogurt and fruit in a jar, glass or bowl. Cover and put in the fridge overnight so as the Oats absorb the Yogurt.

2. In the morning stir well so all the layers are mixed together and top with more fruit…….ENJOY!!!!!! 🙂
